Use any jam you like with this. I had some home made strawberry jam so that’s what I used, but it works well with raspberry jam too.

Gluten Free Coconut and Jam Slice

 Ingredients

Base

  • 90g butter or margarine
  • 1/2 cup caster sugar
  • 2 eggs, lightly beaten
  • 1/3 cup gluten free self raising flour
  • 2/3 cup gluten free plain flour
  • 1/3 cup tapioca flour
  • 1 tsp xanthan or guar gum
  • 3/4 to 1 cup jam

Topping

  • 2 eggs, lightly beaten
  • 1/3 cup caster sugar
  • 2 cups shredded coconut
Method
  • Preheat oven to 150C
  • Cream the butter and sugar together
  • Add the eggs, one at a time, mixing together well after each addition. It may look a bit curdled at first but don’t worry about it, keep beating and it will come together.
  • Sift the flours and gum together twice
  • Mix into the butter mixture in two batches
  • Spread the mixture evenly over the base of a well greased 22cm square baking dish, or 28cm x 18cm lamington tin
  • Spread the jam evenly over the top of the base
  • Mix the eggs, sugar and coconut together and spread over the jam
  • Bake for 50 minutes, until golden brown
  • Cool in the tin, and cut when cold.
